Preparation
Pasta
- Start by making the pasta. Clean the countertop/work surface and place the flour on it. Make a well in the centre of the flour and place the egg in it.
- Start stirring the egg and gradually add more flour.
- After you have mixed all the flour with the egg it will form a dough ball. If necessary, add some olive oil if the ball sticks too much.
- Divide the dough ball into several small pieces and roll them out with a rolling pin. Next, run the dough pieces through the pasta machine until they reach the desired thickness.
- Then pass the pasta through the cutter and place the cut pasta on a tea towel to rest for 15 minutes.
- Then cook the pasta al dente in about 5 minutes.
Honey mustard salmon
- Make a mixture of 100 g salt, 100 g brown bastard sugar and 1 tbsp dried dill and mix well. Then place the salmon in a dish and spread the salt/sugar mixture on top so that the salmon is completely covered. Let this rest for at least 2 hours.
- Light the barbecue and heat to 180 °C. For this recipe, grill with indirect heat (this recipe can also be prepared the same way in a normal oven)
- Remove the salmon from the salt and sugar mixture and make sure the salmon is completely removed from the mixture.
- Stir together the honey and mustard and brush on the salmon slice. Then also sprinkle the Fish Herbs over the salmon.
- Place the salmon fillets skin-side down on an oven tray so that the salmon does not stick to your barbecue grill. Grill for about 15 minutes until the salmon reaches the desired core temperature. If you want a nice soft inside, a core temperature of 50 °C is already sufficient.
- Remove the salmon from the barbecue and serve with the homemade pasta and top with the spring onion and Parmesan cheese. Enjoy your meal!
