Wine barrel shreds are ideal for smoking fish, shellfish, pork, beef, lamb, chicken and cheese because of the delicious red wine aroma. Wine barrel chips can be used either dry or wet. Soak the shreds in water for 20 minutes for a more intense flavor and aroma, then sprinkle them directly on the hot coals. Wine barrel shreds can also be used in a gas barbecue by placing them in a smoker box just below the grill.
